I admit, by the time these tacos came out I was already half full. I couldn't stop myself! Poco & Mom's Cantina has got to have the best chunky tomato salsa I have ever consumed: a flawless fusion of the plump tomatoes, Hatch chiles and about 12 other ingredients. It's not like those finely blended chile salsas south of the border, but more New Mexican. Naturally ...

At this place, it's all about the chunky sauces, the fierce green chile, and the generous handfuls of gooey yellow cheese on just about everything. That's how they do it over there in our neighbor state, and I can see why.

I arrived hoping they'd make me up something with blue corn, but what I got was mostly on the green side. Lumps of earthy shredded red chile beef are tucked into a fried tortilla spilling out with an overgrowth of shredded lettuce. It felt like a road trip: a thing you'd snarf down along the highway somewhere staring at a bunch of sun-drenched red rocks, a little taste of our strange and sprawling nation. 

Insider's tip: They do have blue corn tortillas, just not in taco form ... They're in the Santa Fe Breakfast, covered in red or green chile sauce and two eggs, any style.
