So I'm just gonna say this straight, because it's important: BrushFire BBQ Co. does tacos. And they let you put any barbecued meat you want on top of them. They are called Paco's Tacos, and they are freaking insane.

I felt compelled to get more than one, so I had them make me up a plate of three: A soft smokey brisket taco with sweet and bold sauce, stringy pulled pork with hot sauce, and — wait for it — meatloaf. (Apparently, "nobody's ever gotten that before.")

These are by far the most indulgent of the fusion tacos I've had ... but oh man. Everything is perfect, from the hot corn tortillas lightly fried in garlic butter, to the fresh pico that cuts through the rich sauces. Smoked on pecan and mesquite wood, all three meats were top-notch. But to be honest my favorite was that crumbly meatloaf, which worked much better than even I thought it would. This was so successful, next time I'm trying Italian sausage! 

Newsy tip: The outside of this place is covered in construction right now, because they're expanding the parking lot ...
