Pima County Health inspectors issued a provisional permit late Thursday night allowing Le Cave’s Bakery to reopen.

County officials shut down the doughnut shop on Tuesday after poor health inspections. The bakery reopened Friday. 

A deteriorated roof on the 80-year old building created water leaks throughout the bakery, most critically in food production areas.

Inspection reports and other documents described peeled paint, crumbling plaster from walls and general unsanitary conditions throughout the facility.

County health officials told the Arizona Daily Star on Thursday Le Cave’s would be issued a provisional permit once the immediate health concerns with paint, ceiling tiles, rusted and dirty equipment were addressed.

A provisional permit can be issued for up to six months.

Le Cave’s management said on Thursday they would plan to open as soon as a provisional permit was issued.
