The national publication featured a special plate at Tucson Tamale that contains a red, a white, and a blue tamale. The red tamale has red chile masa in barbecue sauce, the white tamale has white corn masa with chicken, and the blue tamale features blue corn masa with calabacitas.

In an email, owner Todd Martin explained how he came up with the idea:
"My favorite summer treat when I was a kid was a Bomb Pop. ... I was mostly fascinated with the colors, the red, white and blue all on one Popsicle. ... I gathered some of our red masa, our white masa and our blue masa and tried to make one tamale that contained all three colors. While it wasn't a failure (it actually looked and tasted great), it was way too hard to make. Then I thought, maybe it's not one tamale, but three tamales."
