The Bearded Lady is bartender John Hardin's take on the classic drink, the Manhattan. For a local touch, he adds a simple syrup spiked with chiltepin peppers. The result is a little citrus, a little spice and an embrace of sweet cherry juice to round it out. The ideal drink to slip us all into fall weather ...

HighWire's The Bearded Lady

  • 3 Bada Bing Cherries (available at Rumrunner, $8.99 for a jar)
  • 2 orange slices
  • ice
  • 2 ounces Dickel Rye Whisky
  • 1/2 once sweet vermouth
  • 1/2 ounce chiltepin simple syrup (Boil sugar, water and chiltepin chiles until it reduces. Then strain.) 

In a pint glass, muddle two wine soaked cherries and one orange slice with a handful of ice. Add remaining ingredients, another handful of ice and pour into shaker. 

Place a ball or cube of ice into a rocks glass and garnish it with remaining cherry and orange slice. Shake vigorously and strain into glass.
