I admit it, I'm biased about red chile beef. When done right, or perhaps when it's done at all, the viscous velvet sauce has an indescribable power over me. So visceral, so very very good.
All this prefacing is just to say that, yes I finally found someone putting it on a taco, and despite the fact that I was north of River Road, it was one of the best things I've ever eaten in this town. (Believe me?)
But it does help that Angela's Mexican Food is a tiny little truck run by Nogales-native Maria Negrete and her family ... And that she makes it all from scratch, using big hunking red chiles that neither her nor I were able to identify. And that the beef itself was so plump without being too fatty, and the intense peppery salsa that cut through it all, leaving a slow sizzle on my tongue ...
I am actually writing this all from the highway, on my way to Las Vegas and its legion of world-class restaurants. But all I can think about is this little taco I ate on the side of the road in the 110 degree heat, back there at home. How lucky you all are right now ... Enjoy it!
