Blue corn, you saw me sitting alone. In the corner of Zivaz Mexican Bistro on Broadway chowing down on a kaleidoscope of pork belly.
It's not on the menu, so you have to ask for the housemade blue tortillas, a Hopi specialty that's also more common further south in Mexico.
Fluffy and faded blue with a touch of nutty sweetness to them, the tortillas were a welcome diversion from the yellow standard. But in the end they were just another vehicle for the exquisite cubes of bacon, a weekly special that really deserves to be kept around. Smoked and rubbed in ancho chile powder, the meat was like the best of spicy barbecue. Each chunk had three layers: crispy edge, juicy meat center, and that glorious gob of fat that makes it all worth it.
Weird fact: The fast-casual Mexican restaurant also does a serious hamburger, and took the top spot in Caliente's Burger Madness contest back in 2013.
