Diane Gallardo and her husband, Ken, have been in the food and beverage business for more than 30 years, primarily working and managing the “front-of -house” operations. But they were always “paying close attention to what was going on in the kitchen,” says Diane. “We developed our own style through our experience and passion for food.”
Ultimately, this passion led them to opening La Olla Mexican Café, 8553 N. Silverbell in Marana. Diane serves as executive chef, and although she has no formal training, she says she has honed her cooking style at home and by “experimenting, experimenting, experimenting.”
This creative experimentation is what she says she loves most about cooking. That, and bringing good food to the table for people to enjoy. Opening La Olla “has enhanced our enjoyment of the industry,” she says.
We had some other questions for Gallardo:
What is your personal comfort food?
“I’m a foodie, so I love all different kinds of food.”
What three spices are always found in your kitchen?
“Cumin, nutmeg and cinnamon.”
What is your must-have kitchen tool?
“A very sharp knife.”
