Sally Kane, co-owner of The Coronet restaurant, has been brought on as partner and operating manager of downtown’s Agustín Kitchen following the departure of executive chef Ryan Clark.

Kane is bringing on Coronet’s head chef Erika Bostick-Esham, a veteran of Sparkroot and Reilly Craft Pizza and Drink who has six years’ experience working in commercial kitchens.

Bostick-Esham will continue to oversee the kitchen at The Coronet, 402 E. Ninth Street. Starting out, she will make minimal changes to the menu at Agustín, which is in the Mercado San Agustín at 100 S. Avenida del Convento.

“We’ll probably just stay the course. (Agustín) just recently changed to the fall menu,” she said. “We’ll slowly start adding personal touches and our vision, our Coronet style.”

The changeover was announced this week after Clark, a three-time Iron Chef Tucson winner, said he had sold his interest to the restaurant’s partners, Adam Weinstein and Jerry Dixon.

Weinstein, of The Gadsden Co., which also owns the Mercado San Agustín, did not return calls or emails seeking comment Tuesday.

Despite shakeups in the kitchen, the staff behind Agustín’s renowned bar will remain the same, said bar manager Ciaran Wiese.
