Issue No. 31: Apples and hard cider in Iowa City

Nothing beats a Midwest fall, so Feast and Field is going apple picking at one of the region’s best orchards, Wilson’s Orchard & Farm. Known for far more than just their expansive apple-picking grounds, the multifaceted farm also produces sweet and hard cider, a plethora of apple-based — and non-apple — products, and they even operate a highly acclaimed on-site restaurant.

With more varieties than ever to choose from, we offer a comprehensive guide of popular apples including information on their textures, flavors and uses so you can finally know the best option for an afternoon snack or which will take your pie to the next level.

We’re also looking into the hype surrounding apple cider vinegar. A large following swears by its healing qualities, but should you incorporate the sour liquid into your diet or save it for your salad?

Plus, Wilson’s Orchard’s very own head chef, Matt Steigerwald, offers us four unique sweet and savory dishes to use up the remainder of your apple haul.

Rapid Creek Cidery’s orchards provide the inspiration for chef Matt Steigerwald’s creative twists on familiar apple recipes.
