A food truck specializing in North Indian cuisine has plans to open in Tucson by mid-December.
Dubbed The Twisted Tandoor, the eatery on wheels is currently in Phoenix being retrofitted with a mobile kitchen.
Husband and wife team Mukhi and Roop Singh, the owners of the truck, hail from North India.
Mukhi said the food will reflect their roots.
“We wanted to bring a different flair to Indian food in Tucson,” he said. “It has such a history. It is not even remotely possible to touch on all the facets.”
Menu items will include an Amritsari fried fish dish from the state of Punjab and a Kashmiri lamb/goat curry.
