On any given weeknight somewhere in Tucson, you can expect to find two or more food trucks parked in a vacant lot/mall parking lot/Little League game.
From some of these heavy metal cruising kitchens emerges cuisine worthy of fine china and starched linen napkins even if it is served on a paper plate with plastic forks.
These are restaurants on wheels, where talented cooks bring to life delicious culinary ideas. They donโt need brick and mortar or a sprawling dining room; they are limited only by the breadth of their imaginations.
