Double chocolate chip, oatmeal, chocolate chip walnut and ruby chocolate are all staples on 1989 Bake House's menu. 

Nothing hits quite like a warm, freshly baked chocolate chip cookie.

The soft, golden outside and chocolatey inside make each bite so sweet that you can’t help but come back for more.

Cookies are so good that blue furry monsters shovel heaps of them into their mouths and books are written to let you know what happens if you give one to a friendly mouse.

We even leave cookies as a way to thank Santa Claus for visiting our homes.

There is no denying that a great cookie can turn a bad day into a good one. When it comes to life-changing cookies like that, Roselena Trevizo and Randy Koch do not mess around, baking flavorful cookies so massive you can have them as a meal.

Roselena and Randy are the couple behind 1989 Bake House, specializing in uniquely-flavored New York City-style cookies and rich, fudgey brownies, each made from the comfort of their kitchen.

Roselena has always loved baking, picking up the hobby when she was young, Randy said. She eventually went to culinary school and went off to work in the food industry.

She stepped out of the baking scene to focus on something that is just as loveable as cookies: dogs. Roselena and Randy opened a local dog grooming salon, where they have been giving dogs a shiny new coat for about eight years.

But Roselena couldn’t fight her love for baking and decided she wanted to start crafting mouthwatering goodies again. That’s when the couple came up with the idea to start their own in-house bakery.

1989 Bake House serves up delicious baked goods like New York City-style cookies and fudgy brownies.

1989 Bake House was officially open and ready for business in September of last year. Not only were they making sure people’s dogs looked their best, but they were also attending local farmers markets selling their cookies and brownies.

“We do dog grooming most of the days of the week and then we bake,” Randy said. “We take one day off during the week to bake and get everything prepared for the weekends.”

1989 Bake House has made a name for themselves with their massive cookies. Since they take inspiration from the baked goods seen in New York City, their cookies are just under half a pound of deliciousness.

You can always expect to see a chocolate chip walnut cookie on the menu. To make the staple, the couple only uses the best ingredients, which means they order their chocolate from Belgium, the chocolate capital of the world.

Oatmeal, double chocolate chip and ruby chocolate are also staples on the 1989 Bake House menu. Ruby chocolate, which is a pink, fruitier-tasting chocolate, is something you don’t often see in Tucson, Randy said. They had initially only brought the flavor in for Valentine’s Day but added it to the menu when customers couldn’t get enough of it.

In addition to their staples, the couple also comes up with new monthly flavors. Recently, they mixed together the warm spice of chai and a classic sandwich cookie to create a chai Oreo cookie.

They also turned a beloved summer treat into a warm, golden cookie. Their s’mores cookie incorporates the quintessential chocolate and graham cracker flavors, complete with a roasted marshmallow on top.

“We actually are in development of a cookie right now and there's not a cookie like this in Tucson,” Randy said. “All I can tell you is keep an eye on Instagram. It's a TikTok trend right now, but it's not a TikTok cookie trend. It's a different candy that's trending and we're going to work it into a cookie.”

Cookies aren’t the only thing the couple has mastered. They also make rich brownies, cinnamon rolls, cakes and cupcakes.

“We use almost four pounds of chocolate in one of our brownie pans,” Randy said.

Though 1989 Bake House has only been up and running for about a year, they have already stolen Tucsonans’ hearts. Randy said they have customers that will show up no matter where they are, ready to indulge in a sweet treat.

“People start to recognize you, which is funny,” Randy said. “You’d just be walking around a grocery store and people will recognize you as 1989 Bake House and they ask where we're going to be because they need another brownie.”

As 1989 Bake House continues to grow, the couple plans to continue baking delectable cookies in flavors you’ve never seen before. Brookies, pink peppercorn chocolate chip cookies and expanding their gluten-free menu to include their signature cinnamon rolls are all in the works.

“Tucson is a great place for growing your small businesses, especially like a little bakery that you do out of your house,” Randy said.
